You have got to try this Instant Pot Shrimp Lo Mein Recipe. It is mainly a shrimp and broccoli lo mein with a few carrots, but you can add any other veggies that you prefer. We love getting shrimp and chicken lo mein take out. I have tried duplicating it many times on the stove and one other time in the Instant Pot but never really liked the results until now. This recipe is simple and easy to make. I think next time I will try it with shrimp and chicken.

Can you substitute spaghetti noodles for lo mein noodles?
I can’t tell you how many times I have tried to find the lo mein noodles, that we like, from our local grocery store or even order them online. I have tried so many different store bought lo mein noodles but for some reason they never taste exactly like the take out lo mein that we get from our favorite restaurants. So, we now use linguine spaghetti noodles. It comes out very good in my opinion and is comparable to the lo mein noodles that we prefer from restaurants.
Ingredients – Instant Pot Shrimp Lo Mein
1 lb. Shrimp
8 oz. Linguini Noodles
1/2 Tbsp. Minced Garlic
½ Cup Soy Sauce
½ Cup Hoisin Sauce
½ Tbsp. Brown Sugar
1 Cup Matchstick Carrots
2 Cups Chicken Stock
12 oz. Bag Frozen Broccoli
Instructions – Instant Pot Shrimp Lo Mein
#1. First, place your chicken stock, soy sauce, hoisin sauce, minced garlic, and ½ tbsp. brown sugar in your Instant Pot.
#2. Next add your shrimp.
#3. Then break you Linguini noodles into sections of three. Toss them on top of the shrimp in a messy fashion. If you put them in just as they come out of the box (laying next to each other) they will get stuck together.
#4. Next place your carrots on top of noodles and then frozen broccoli on top of everything. (**Please Note – You have two options for cooking your broccoli. You can either pressure cook on top of ingredients in your Instant Pot for “well done” broccoli or you can steam in the microwave separately and add it to you pot after pressure cooking.)
#5. Then close the lid and turn the steam release valve to the “sealing” position.
#6. Next, press the pressure cook button. Then press pressure level button until high pressure is selected. Set the timer for 2 minutes.
#7. After the timer has completed turn the steam release valve to “venting” for a quick release of steam. **Warning – The steam is very hot, use a towel to turn the release valve so it does not burn you.
#8. I took my broccoli out with a large spoon and placed them on the side before stirring the pot and serving to keep it from falling apart. Then we added it to our plates individually. If you don’t mind your broccoli falling apart you can stir it all together also.
#8. Finally, serve and enjoy!
