Instant Pot Mississippi Pot Roast is so full of flavor and tender it will make you wonder why you have not been cooking your roast this way all along! Not to mention it is so simple to cook in the Instant Pot. Some people brown their meat before dumping in the remaining ingredients and setting the timer. You can do it without browning if you want to make it even easier. Without browning the meat first you basically dump everything in, seal, and cook.

I sprinkled my meat with a little Tony Chachere’s and placed them in my Instant Pot. I put my Instant Pot on Saute mode for just a couple of minutes. Once it started filling the pot with its own juices I dumped all the remaining ingredients in, switched it to pressure cook, and closed the lid. I really don’t think browning your meat beforehand with the recipe makes any difference at all. It came out so full of flavor and delicious!
You can make Instant Pot Mississippi Pot Roast with any type of beef you choose. Most people use one big chunk of meat for this recipe. Some chop the roast up into chunks. I use the eye of round steak or chuck tender steaks. It makes a quick Instant Pot Recipe even quicker because of the size and the way the meat is pre-cut. We prefer the flavor of the eye of round steak and chuck tender steak whenever we cook regular rice and gravy. Plus, when you add the ingredients of the Mississippi Pot Roast it is even more delicious!

We use the 8 qt. Instant Pot to prepare all our meals.
We also use a digital cooking thermometer like this. If you have any question about what temperature something should be cooked at or reheated at you can check out FoodSafety.gov. That’s what we use. 😉
Ingredients – Instant Pot Mississippi Pot Roast
- 2 lb. Beef Roast
- Jar of Peperoncini Peppers (Use about 6)
- Stick of Butter (sliced)
- A packet of dry Au Jus Gravy Mix
- A packet of dry Ranch Dressing Seasoning Mix
- 3 tbsp. of oil
- 1 tbsp seasoning of choice (We use Tony Chachere’s)
Instructions – Instant Pot Mississippi Pot Roast
#1. First, put your Instant Pot on Sauté (high) and add three tablespoons of vegetable or olive oil.
#2. Next, add your beef and 1 tbsp. seasoning of choice to your meat. Place all of your meat into the Instant Pot. Once your pot starts accumulating the juice from your meat proceed with the rest of the recipe. (No browning required) The 1 cup of “juice” that your pot accumulates in this step is the liquid that it will use to pressure cook your meat.
#3. Then sprinkle your packets of Ranch and Au Jus on top of your meat. Place the Peperoncini Peppers and sliced butter on top of the meat.
#4. Close the lid and turn the steam release valve to the “sealing” position.
#5. Next, press the pressure cook button. Then press pressure level button until high is selected. Set timer for 45 minutes. **Please note- If your Instant Pot is still on sauté mode you will need to press “Cancel” then “Pressure Cook”.
#6. After the timer has completed allow your Instant Pot to naturally release the pressure. This should take about 20 minutes.
#7. Finally, serve over rice or mashed potatoes and enjoy!
Final Thoughts
Instant Pot Mississippi Pot Roast is so full of flavor and delicious. It can be served over mashed potatoes or rice. It is delicious either way! You could even serve it with cornbread or use up your leftovers as roast beef sandwiches or poboys with au jus dipping sauce! But fair warning, this roast is so good you might not have any leftover! One more thing… you can even cook Mississippi Pot Roast in your slow cooker. 🙂
