Instant Pot Mexican Rice is so simple to make. This is a dump and push start Instant Pot Mexican Rice recipe. I love the convenience of using my Instant Pot for any meal that I can. We cooked regular Instant Pot white rice in it first and it came out perfectly the first try. This time we just adjusted the recipe a bit to make our version of Mexican rice or I guess you could call it Spanish rice also??? I have a few other ideas I will be trying next like……. Instant Pot rice dressing and Instant Pot rice a roni! Can’t wait to see how they will turn out! 😊

How do you pressure cook Spanish rice?
This is probably not an authenticate Spanish rice or Mexican rice recipe. This is our version that is comparable to the Mexican rice with peas and carrots that we get from Mexican restaurants in our area. Instead of using chicken bouillon we use Knorr Chicken Stock that comes in a tub. We also add tomato sauce and frozen peas and carrots.

Ingredients – Instant Pot Mexican Rice
2 cups of medium grain white rice
1 tbsp oil
2 cups of liquid chicken broth
1 tub Knorr concentrated chicken stock (chopped up into small pieces)
1 teaspoon minced garlic
8 oz. can Tomato sauce (here are gluten free tomato sauce options)
1-2 cups Frozen carrots and peas
Instructions – Instant Pot Mexican Rice
#1. First, rinse your rice and put it in your Instant Pot.
#2. Next, add your oil, liquid chicken stock, chopped up knorr chicken stock concentrate, minced garlic, and tomato sauce. Stir it all together.
#3. Then add your frozen carrots and peas on top.
#4. Next, close the lid and turn the steam release valve to the “sealing” position.
#5. Then press the “Pressure Cook” button. Next, press the “Pressure Level” button until you have selected “High Pressure”.
#6. Turn the timer on for 6 minutes. Once pressure builds up, the timer will start counting down.
#7. After the timer has completed turn the steam release valve to “Venting” for a quick release of steam. Watch it close. You may have to close it and open it just partially if some of the liquid sprays out. **Warning – The steam is very hot, use a towel to turn the release valve so it does not burn you.
#8. Thats it!! Your Instant Pot Mexican Rice is ready to be served!
