Instant Pot Mexican Rice is so simple to make.  This is a dump and push start Instant Pot Mexican Rice recipe.  I love the convenience of using my Instant Pot for any meal that I can.  We cooked regular Instant Pot white rice in it first and it came out perfectly the first try.  This time we just adjusted the recipe a bit to make our version of  Mexican rice or I guess you could call it Spanish rice also???  I have a few other ideas I will be trying next like…….
