Instant Pot Chicken Fajitas are so easy to make. They literally take no time at all to prepare. They cook in the Instant Pot in just 10 minutes. The prep work of slicing your chicken breast, bell peppers, and onions into strips takes you longer then the actual cooking of the fajitas do.

An easy way to cut down on your prep work for these is to prepare more than one Instant Pot Chicken Fajita meal at a time.
Slice enough chicken breast, bell peppers, and onions for 3 or more Instant Pot Chicken Fajita meals. Place one meal in the Instant Pot to cook and separate the extra Chicken Breast, bell peppers, and onions into freezer bags.
Then when you are ready to have Instant Pot Chicken Fajitas again all you have to do is grab your already prepped bag out of the freezer and dump into your instant pot. I prefer to defrost mine before cooking in the Instant Pot. Some people do cook them straight from the freezer as well though.
We used the 8 qt Instant Pot to prepare these Instant Pot Chicken Fajitas.

This Instant Pot Chicken Fajita Recipe is enough to feed a family of four. If you need to feed more just double the ingredients.

Ingredients – Instant Pot Chicken Fajitas
- 2 ½ lbs of Chicken Breast sliced into strips
- Frontera Fajita Seasoning Pack (liquid)
- 2-3 Bell Peppers sliced into strips (Any colors)
- 1 Large Onion
- Tortillas
- Toppings of choice (optional)
Instructions – Instant Pot Chicken Fajitas
#1. First, place sliced chicken breast into Instant Pot first. Mix with Frontera liquid fajita seasoning pack. **Please note- if you prefer using a different fajita seasoning that is dry you will need to add ½ cup of water also.
#2. Next, place your sliced bell peppers and onion on top of your sliced chicken breast. **Please note- You will want to slice your bell peppers into wider sections than you would for regular fajitas in order to keep them from falling apart in the Instant Pot.
#3. Then close your Instant Pot lid and turn the steam release valve to the “Sealing” position.
#4. Pressure cook on high for 10 minutes.
#5. After the timer has completed turn the steam release valve to “Venting” for a quick release of steam. **Waning – The steam is very hot, use a towel to turn the release valve so it does not burn you.
#6. Serve with your warm tortillas and any additional toppings you prefer. We like shredded lettuce, Cheese, salsa, and sour cream!
Final Thoughts
Instant Pot Chicken Fajitas is so quick and easy to prepare. If you always keep tortillas on hand and a freezer bag mix of chicken and veggies in the freezer you can have a meal cooked in no time. Not to mention that these are very delicious! We will try making these with beef and/or shrimp also!
